Combine cooled cooked grains (farro, barley, quinoa) with chopped spinach, roasted vegetables, herbs, nuts or seeds, and a simple vinaigrette. The warm grains will slightly soften spinach if you want a wilted effect; for crisper leaves, cool the grains completely first.
